This Tomato Macaroni Soup is a copycat from one of my favorite restaurants from Logan, UT called Juniper Takeout.

Now that we don’t live there anymore, I tried to recreate it as close as I could. It turned out pretty good!

This is a great recipe to make when you need something quick and filling. It’s such a comforting soup! You can store leftovers in an airtight container in your fridge for 3-5 days too, but it’s best fresh. It’s even a hit with picky eaters! There are a lot of pantry staples and simple ingredients in this one too, so it’s an easy recipe to make when you need something fast.

Top it with parmesan cheese and your whole family will love it! It’s a great soup for when you need comfort food, but it’s also healthy. You can substitute ground beef with Italian sausage if you would like!

Ingredients needed for Tomato Macaroni Soup:

  • 1poundground beef
  • 1oniondiced
  • 3(15 ounce)beef broth
  • 14ouncesdiced tomatoes
  • 1cupketchup
  • 6ouncestomato paste
  • 1cupshredded carrots
  • 3Tablespoonssteak sauce
  • 1Tablespoonbrown sugar
  • 1TablespoonWorcestershire sauce
  • ½teaspoondried basil
  • ½teaspoongarlic powder
  • salt and pepperto taste
  • 1 ½cupselbow macaronicooked

How to make Tomato Macaroni Soup:

In a skillet over medium high heat, brown ground beef and diced onions; drain and set aside.

In a large stock pot, mix add beef broth, diced tomatoes, ketchup, tomato paste, carrots, steak sauce, brown sugar, Worcestershire, basil, garlic powder, salt, and pepper and cook over medium high heat.

Bring to a boil then reduce heat to low. Add beef and onion and simmer for 10 minutes.

Add cooked macaroni and serve.

Ingredients

  • 1 pound ground beef
  • 1 onion diced
  • 3 (15 ounce) beef broth
  • 14 ounces diced tomatoes
  • 1 cup ketchup
  • 6 ounces tomato paste
  • 1 cup shredded carrots
  • 3 Tablespoons steak sauce
  • 1 Tablespoon brown sugar
  • 1 Tablespoon Worcestershire sauce
  • ½ teaspoon dried basil
  • ½ teaspoon garlic powder
  • salt and pepper to taste
  • 1 ½ cups elbow macaroni cooked

Instructions

  • In a skillet over medium high heat, brown ground beef and diced onions; drain and set aside.

  • If you don’t want to use ketchup you can use tomato paste instead

    How crucial would you say the ketchup is?? I'm not a fan at all and a cup seems like a ton but if it's noticeably different without the ketchup I can suck it up, lol.

    I'm making this for dinner right now! The only question I have is whether I start with 1 1/2 cups dry macaroni or if it's 1 1/2 cups already cooked :-? I'm going with dry, because i can always set some aside for another recipe...

    Tasted like sloppy joes soup! It was way too sweet for my liking, but I liked it in general. I think I'll tweak it next time. Less ketchup and no brown sugar. Maybe plain tomato sauce instead.

    My Mother use to make something very similar to this recipe, she didn't use brown sugar, she used regular sugar, just a small amount to lessen the tang from the tomatoes. I love it, it's great on a cold day, plus it's quick and easy to make. It's also relatively cheap to purchase all the ingredients, with the exception of the ground Beef of course.

    It's ground beef. When it is cooking you can naturally let it cook in clumps. Not breaking it all the way up. That is what we did.

    This is a great recipe! I did change a few things and next time I make I may change a few more, but it's pretty fabulous. Changes: I used 4 cloves of garlic instead of garlic powder, I used twice the amount of grated carrots, I used Italian sausage instead of ground beef, I used Italian seasoning instead of dried basil. I also went ahead and sauteed the onion and garlic with olive oil before adding the sausage to brown. Next time I'll probably use about half the ketchup and half the A1 and Worcestershire because it was a tad "saucier" than I like. Not bad at all, I mean I'm eagerly eating it as is, but I think I'd prefer it with a little less tang. Also want to add that I'm pretty sure this soup saved me from a pretty bad cold that I was trying to catch. I was feeling really crappy, sore throat, body aches, the beginning of a fever, and I ate a big bowl of this soup, which felt great on my throat, and next morning I was feeling waaaay better than I thought I would. So I say, better than chicken soup for a cold cure!!

    Agree about the ketchup...all that corn syrup! I doubled up on the tomato paste and skipped the ketchup. It was fine.

    Just made it & ate it! Yummy!! However, I agree just a bit too sweet. I won't toss it but do you think adding another can of tomato paste & some beef broth would help? Any suggestions...I'd appreciate it. Thank you! :)

    Just fixed this for dinner. My family thought it was way too sweet. It was very hard to finish the bowl. Not sure what to do with the leftovers. I'd like to try it again but will use less than half the sugar and decrease the amount of Worcestershire and A1 sauces.

    Yes, agree it is way too sweet. Family didn't like it. I would use tomato paste instead of ketchup and reduce or remove the brown sugar. I think that would fix the sweetness.

    Made this tonight. I skipped the brown sugar. Did 2 tablespoons instead of 3 for A1 and worcestershire. Did about 1/2 cup of ketchup and added about 2 tablespoons of mustard. I did add the optional carrots. Also, I added 5 leaves of fresh basil and let them simmer with the soup and removed when finished. I also used about 3 cloves of fresh garlic.

    We make this soup all the time, but ours is a lot simpler. Macaroni, ground beef, but we just mix it with tomato sauce and tomato juice, seasoned with salt and pepper, garlic, and onion if you want. I usually add onion salt or powder. Sometimes we add diced tomatoes as well, just depending on the mood. I will have to try this one though too, it sounds good! :)

    This was very good. I used 32oz off Beef stock instead of 45oz of beef broth. I liked the hardy taste of the A1 sauce and Worcestershire sauce.

    Just the recipe I was looking for to use up leftover cooked pasta and chunky pasta sauce. So I followed the recipe with the exception of using the pasta sauce instead of the canned tomatoes, the ketchup, and the tomato paste and then did not use A1 or brown sugar. The grated carrots were a great addition but I also added some baby spinach for extra veggies. Topped with parmesan cheese. Thank you - great recipe that I'm sure will be made again!

    Can this be frozen? I made this for my husband. I didn’t add the burger and I only used 1/2 cup of ketchup I also used real garlic that I sautéed with the onions. I also left. Out the sugar because it was sweet enough. It was very good.

So the nutrition facts are now there for the Tomato Macaroni Soup. Hope this helps. This is for 6 servings with this recipe. If you get 8 servings, it will be fewer calories.
